Cobblestone Cooking Music XIII – Experimental Pineapple Crumble


On a day that is really a sad day and one that I may yet choose to write about in a separate, serious piece – due to yesterday’s and this morning’s meaningless and terrorist-like shootings in Copenhagen – I had half a pineapple that needed dealing with

Cut the peel (if that what it is on the outside of a pineapple) off pineapple and likewise the stem in the middle. Cut the remaining fruit in two or three lengthwise according to the size of the thing and then cut into suitable mouthfuls across.

Put the pineapple chunks in a bowl and pour a couple of spoonfuls of Grand Marnier (or Cointreau) over and mix. Mix brown sugar and Demerara sugar, pour into the bowl and mix until all pineapple chunks are well sugared.

  • Darts, Sh-Boom

Mix flour, oatmeal, hazelnuts, almonds and sugar in a food processor and give it a good whirl with the knife tool to make it a mix with the nuts ground somewhat fine. Put in some butter and give it a whirl more to make the crumble. Put the pineapple in a suitable ovenproof dish, put the crumble on top and bake for 20-ish minutes at 200°C.

Serve with whipped cream or creme fraiche.
